Spaghetti with Bourbon Mushroom Cream Sauce

Ingredients

  • 1 11 oz package Grandma’s thick cut spaghetti
  • 1 lb mushrooms, sliced (a variety is best - crimini, oyster, etc.)
  • 1 cup shallots, thinly sliced
  • 3 fresh thyme sprigs, or 1 tbsp chopped thyme
  • 3 Tbsp salted butter
  • ½ cup bourbon
  • 1 ½ cups half and half
  • Salt and pepper, to taste

Directions

  1. Bring a large pot of salted water (6 quarts water + 2 Tbsp salt) to a boil. Cook noodles according to package directions while you cook the other ingredients, then drain well.
  2. Heat a large cast iron skillet over medium-high heat. Add the sliced mushrooms (no butter needed) and cook for 7-8 minutes, stirring often, until they release their liquid and it evaporates. This “dry sauté” step helps concentrate their flavor.
  3. Reduce the heat to medium. Add the butter, shallots, and thyme to the mushrooms. Season lightly with salt and pepper. Cook for 8-10 minutes, stirring occasionally, until the shallots are soft and translucent.
  4. Remove the pan from the heat to prevent flare-ups, then carefully pour in the bourbon. Return to medium heat and simmer for 2-3 minutes, stirring, until most of the liquid has cooked off.
  5. Pour in the half and half and bring to a gentle simmer. Cook for 3-4 minutes, or until the sauce slightly thickens. Taste and adjust seasoning with salt and pepper.
  6. Add the drained noodles to the skillet and toss well to coat in the sauce. Cook for another 2-3 minutes, stirring frequently, until the sauce clings to the noodles and thickens slightly.
  7. Remove from heat and serve warm. Garnish with extra thyme or a sprinkle of black pepper if desired.
