Grandma's Breakfast Noodles with Bacon

Ingredients

  • 1 package of Grandma's Egg Noodles 
  • 1 Medium Onion, diced 
  • 1 Medium Bell Pepper, diced 
  • 1 Cup Grape or Cherry Tomatoes, halved 
  • 1 Cup of Spinach, chopped 
  • 10 strips Bacon, chopped 
  • 10 Eggs, lightly beaten 
  • 1 Cup Cheddar Cheese 
  • 1/4 Cup Extra Cheese, grated for topping 
  • 1/2 teaspoon Garlic Powder 
  • Sea Salt and freshly Ground Black Pepper to taste 
  • Fresh Parsley or Chives (optional) 
  • 1 cup Mushrooms (optional), sliced 

Directions

  1. Cook the noodles: Prepare Grandma's Wide Noodles according to the package instructions. Drain, cover, and set aside.

  2. Prep the casserole dish: Lightly grease a 9" casserole dish and preheat your oven to 350°F (175°C).

  3. Cook the bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and drain on paper towels. Reserve about 1 tablespoon of bacon fat in the skillet.

  4. Sauté the vegetables: In the same skillet, add the diced onion and bell pepper. Sauté until the onion becomes translucent. Add mushrooms (if using), tomatoes, and spinach, and sauté for another 2-3 minutes until softened. (Add a tablespoon of butter to the pan before cooking if not enough fat remains from cooking the bacon.)

  5. Combine ingredients: In a large mixing bowl, combine the cooked egg noodles, crispy bacon, sautéed vegetables, garlic powder, and 1 cup of cheddar cheese. Mix well to distribute all ingredients evenly.
