Beef bone broth. How we can tap into the nourishment of oxtail, short rib, knuckle and shank when feeling depleted down to our own bones. Found in the meat section of your local butcher or grocery store, these bones are first roasted to clean them of excess collagen, stagnant blood, and other impurities. Roasting also further cures the protein and vitamin hit they will deliver when next simmered in a broth of your making. If you can find grass-fed and/or organic bones, all the better, and add those to your choice of diced up veggies like leek, onion and celery, and herbs and spices like bay leaf and good old salt and pepper. You can simmer for 12 hours in a crockpot or stovetop or speed it up and use a pressure cooker for less than half the time. Our recipe goes for the full simmer of a slow cooker recipe with consistent skimming off the top to further control the profusion of gelatin that can occur with making beef bone broth at home. The result is a clearer, cleaner, and rich beef bone broth that is just waiting for some Grandma’s egg noodles to move from sipping broth (amazing in its own way!) to a nourishing, filling, easy dinner anytime you need it.


What Is Bone Broth?

Made by simmering high-marrow bones like beef or pork with vegetables, and spices for much longer, bone broth extracts maximum flavor and collagen, making it nutrient-rich and highly flavorful. With or without salt, the taste of bone broth is a step above and the time you put into making it will be rewarded in warmth and excess nourishment.

Grandma's Beef Bone Broth

Ingredients

  • 3 1/2 pounds beef bones (oxtail, short rib, knuckle, or shank)
  • 2 stalks celery, cut into 2-inch pieces
  • 1 large onion, cut into 8 pieces
  • 1 medium leek, roots trimmed, cleaned, and cut into 2-inch pieces
  • 1 whole head garlic, halved crosswise
  • 12 cups water (or as needed)
  • 2 bay leaves (or more to taste)
  • 1 tablespoon white vinegar
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

    1. Preheat your oven to 450°F (230°C).

    2. Line a baking sheet with aluminum foil.
    3. Place the beef bones on the prepared baking sheet.

    1. Roast the bones in the preheated oven for 40 minutes.

    2. Turn the bones halfway through the roasting process for even browning.

    1. Transfer the roasted bones to a large stockpot, including any juices from the baking sheet.

    2. Add celery, onion, leek, and garlic to the pot.
    3. Pour in enough water to completely cover the bones.
    4. Stir in bay leaves, vinegar, salt, and pepper.

    1. Bring the mixture to a boil over medium-high heat.

    2. Reduce the heat to a very low simmer and cover the pot, leaving the lid slightly vented.
    3. Simmer for 12 hours, skimming off any foam or impurities that rise to the top.
    4. Add more water as needed to keep the bones and vegetables submerged.

    1. Remove the stockpot from heat and allow the broth to cool to room temperature.

    2. Strain the broth through a fine-mesh strainer into a clean pot, discarding the bones and vegetables.
