Cooking summer BLT noodles is all about capturing the fresh, vibrant flavors of the season while keeping the dish light and satisfying. Grandma's Frozen Egg Noodles add a rich, hearty texture that balances well with the crispness of the bacon and the freshness of the lettuce and tomatoes. This dish can be the main event or is a great complement to grilled chicken or fish.

Ingredients
4 strips of bacon, diced
2 cups halved grape tomatoes
1 teaspoon sugar
1 cup thinly sliced leeks
½ cup dry white wine
1 cup low sodium chicken broth
1 teaspoons red wine vinegar
½ teaspoon red pepper flakes
1 package Grandma’s Frozen Spaghetti Noodles
2 cups fresh spinach leaves
½ teaspoon minced fresh thyme

Gather ingredients and slice tomatoes and leeks. Dice bacon into small pieces.

We recommend setting Grandma’s Noodles out for 10-30 mins before cooking to thaw, but this is not required.
Start pot of water and turn up heat to bring to a rolling boil. Add noodles and cook for 12-15 minutes while preparing meat and vegetables.

Cook bacon in a large non-stick skilled over medium heat until crisp. Transfer meat to a paper towel lined plate and pour off all but one Tblsp. of drippings from the pan.
Caramelize tomatoes and sugar in the remaining drippings over medium heat, about 5 minutes, or until they begin to brown.
Add leeks and saute until wilted, about 3 to 4 minutes.
Deglaze the skillet with wine and simmer until liquid is nearly evaporated.
Add chicken broth, vinegar, and pepper flakes, and simmer until liquid is reduced by about a third, or about 5 minutes.
Add spinach, thyme, and cooked bacon to tomato mixture.
Transfer cooked pasta from cooking pot to skillet with tongs and toss with remaining ingredients.
