Rainbow Noodle Bento Box

Ingredients

  • ⅓ cup olive oil
  • ⅓ cup rice vinegar
  • ⅓ cup soy sauce
  • ¼ cup sesame oil
  • ¼ cup honey
  • Other Ingredients:
  • 1 16 oz package Grandma’s wide frozen egg noodles
  • 3 cups diced rotisserie chicken
  • 2 cups diced mango
  • 1 cup shredded red cabbage
  • 1 cup carrots, shredded or cut into thin matchsticks
  • 1 cup cucumber, cut into thin matchsticks or sliced
  • 1 cup red bell pepper, diced
  • Sesame seeds (optional, for garnish)

Directions

  1. Fill a large pot with 6 quarts of water and 2 tablespoons of salt. Bring to a boil. Cook the noodles according to the package directions while you prepare the other ingredients. Drain the noodles, then rinse under cold water until completely cooled. Drain thoroughly.
  2. Add all dressing ingredients to a glass jar. Secure the lid and shake until the dressing is well-combined.
  3. Toss the noodles with ½ cup of the dressing and set aside.
  4. Optional: Toss the chicken with ½ cup of dressing before serving.
  5. Serving option 1: Arrange noodles in the large compartment of the divided container.

  6. Place diced chicken and cut fruits and vegetables in the remaining compartments.
  7. Sprinkle sesame seeds over the noodles and chicken.
  8. Serve dressing in a small container on the side.
  9. Children can add the toppings to their noodles or eat the components separately. Extra dressing can be drizzled over the top or used for dipping.
