Grandma's Homemade Turkey Stock: Perfect for the Holidays

If you haven’t already roasted a turkey for Thanksgiving, this turkey stock recipe starts with roasting turkey wings - but other poultry applies here as well. As with beef bones, roasting the bones for holiday-perfect turkey stock cures them and the meat to enhance the richness of taste and nutritional value. While roasting, the veggies, herbs and spices begin to meld in a stir-fry, and then everything is thrown in a crock-pot or stovetop pot with the right amount of water for a gentle simmer for 2+ hours. Once done, strain the liquid, first removing larger ingredients like bones, herbs and veggies before pouring the mixture through a strainer into a bowl. Taste for salt or not, and if you are not going to cook with it right away, store by first straining fat off the top and letting it cool before refrigerating or freezing. We love turning this into “chicken” noodle soup with a package (or two) of Grandma’s Noodles egg noodles.
What Is Stock?
Stock is the building block for broth and involves simmering vegetables and spices with or without bones (usually chicken, fish, etc) and meat. When including bones in the making of stock, they will release collagen when stewed and give stock a richer flavor and texture. Go for stock recipes where you want to build a flavor base with low to no sodium.

Ingredients
3 pounds turkey wings (or chicken wings)
Kosher salt and freshly ground pepper
2 tablespoons olive oil
2 onions, halved
2 carrots, chopped
2 celery stalks, chopped
1 handful fresh parsley
2 sprigs fresh thyme
1 handful fresh sage

Preheat your oven to 450°F.
Place turkey wings in a baking dish and season with kosher salt and freshly ground pepper.
Brush wings with 1/2 tablespoon olive oil for enhanced browning.

Roast wings for 30 minutes, flip, and roast an additional 30-40 minutes until golden brown.

Heat remaining olive oil in a large stockpot over medium heat.
Add onions, carrots, and celery with a pinch of salt and pepper.
Sauté until golden and caramelized (8-10 minutes).

Add roasted wings to the pot with sautéed vegetables.
Toss in parsley, thyme, and sage.
Cover with 14-16 cups of water, bring to a boil, then simmer uncovered for 30 minutes, skimming foam.

Cover and simmer gently for 2-2.5 hours, stirring occasionally and adding water if needed.

Remove wings and vegetables, then strain stock through a fine-mesh strainer into a bowl.
Taste and season with kosher salt (1-2 teaspoons).

Skim fat from the surface, cool stock rapidly in an ice bath, and refrigerate.
