Egg Noodles with Zesty Peanut Sauce

Ingredients

  • 1 11 oz package of Grandma’s spaghetti noodles (or wide egg noodles)
  • ½ cup creamy peanut butter
  • ¼ cup water
  • 3 Tbsp fresh lime juice
  • 2 Tbsp soy sauce
  • 1 Tbsp honey
  • 1 Tbsp chili garlic sauce (Sambal Oelek, etc.)
  • 1 tsp fresh lime zest
  • 1 tsp fish sauce
  • 1 tsp fresh ginger, minced
  • 1 tsp garlic, minced
  • 2 Tbsp table salt (for pasta water)
  • ½ cup lightly salted roasted peanuts, roughly chopped (plus more for garnish, if desired)
  • ¼ cup cilantro, finely chopped (plus more for garnish, if desired)
  • ¼ cup green onions, finely chopped (plus more for garnish, if desired)
  • chili crisp (optional, for serving)
  • lime wedges (optional, for serving)

Directions

  1. Fill a large pot with 6 quarts of water and 2 tablespoons of salt. Bring to a boil. Cook the noodles according to the package directions while you prepare the sauce and other ingredients. Drain the noodles before adding them to the sauce.

  2. Add all peanut sauce ingredients to a medium bowl. Whisk until smooth.
  3. Add peanut sauce to a medium or large skillet. Slowly heat over medium-low heat for 2-3 minutes, stirring frequently.
  4. Add noodles to the sauce and stir to combine. Cook for 1-2 minutes, stirring frequently.
  5. Remove the pan from the heat and stir in chopped peanuts, chopped cilantro, and chopped green onions.
  6. Top with additional chopped peanuts, cilantro, green onions, and chili crisp, if desired. Serve with lime wedges. Enjoy!
