Made with Grandma’s wide frozen egg noodles, this dish has that nostalgic, homestyle texture you can’t get from boxed pasta. The noodles soak up all the tangy, spicy buffalo sauce, while a rich mix of sour cream and cream cheese keeps every bite creamy and satisfying. Add in tender rotisserie chicken and a hearty sprinkle of cheddar jack cheese, and you’ve got a one-dish wonder that’s perfect for a weeknight dinner or potluck.
The best part? It only takes five minutes to prep! While the noodles cook, you can quickly mix the sauce and shred the chicken. Then it’s just a matter of mixing it all together, popping it in a casserole dish, and letting the oven do the work. Ingredients
- 1 11 oz package Grandma’s wide frozen egg noodles
- 1 cup sour cream
- 4 oz cream cheese, softened
- ½ cup buffalo sauce
- ¼ cup milk
- 3 cups shredded rotisserie chicken
- 1 ½ cups shredded cheddar jack cheese, divided
- Sliced green onions, for garnish
- Buffalo sauce, for garnish
Directions
Preheat oven to 375°F. Grease a 2 or 3 quart casserole dish.
- Fill a large pot with 6 quarts of water and 2 tablespoons of salt. Bring to a boil. Cook the noodles according to the package directions while you prepare the other casserole ingredients. Drain the noodles and set aside.
- Whisk together sour cream, cream cheese, buffalo sauce, and milk in a large bowl.
- Add cooked noodles, shredded chicken, and 1 cup of shredded cheese to the bowl. Stir to combine.
- Pour the noodle mixture into the greased casserole dish. Top with the remaining ½ cup of shredded cheese.
- Bake for 25-30 minutes, or until the filling is bubbly and the cheese is melted.
- Turn the broiler on low and broil for an additional 3-4 minutes to brown the cheese, if desired.
- Drizzle with buffalo sauce and top with sliced green onions, if desired. Enjoy!
